Created by renowned chef Gastón Acurio, it pays tribute to Cusqueño culinary wisdom. Address: Plaza Regocijo 261, second floor. Hours: Mon–Sun, 12:00 – 21:30. Must try: anticuchos, Chupe 5 Sabores, stuffed rocoto and the Andean soup with olluco, quinoa, curry, coconut milk and squash.

3 · Huacatay

Founded by Pío Vásquez de Velasco in the Sacred Valley, it has become a welcoming place serving fresh local ingredients with Mediterranean and Asian influences. Address: Jirón Arica, Urubamba. Hours: Mon–Sat 12:30 – 21:30; Sun 9:00 – 17:00. Must try: alpaca loin in port and thyme sauce.

4 · MIL Centro

Chef Virgilio Martínez brings his vision to the edge of the Moray Archaeological Complex at 3,680 meters above sea level. Address: Moray, Maras, Cusco. Experience: the MIL World Immersion: explore the surroundings, discover local ingredients and visit the microlaboratory for fermentation, distillation and maceration.

One of Cusco's oldest restaurants, right beside the Plaza de Armas. Address: Portal de Panes 115, Cusco. Hours: 12:00 – 22:00 every day. Must try: Nuevo-Andine and international dishes featuring fresh trout, Andean cheese, quinoa and alpaca.

A landmark of Andean flavor that respects traditional cooking methods. Must try: pachamanca—meat and vegetables cooked underground—and roast guinea pig.
